Tandouri Chicken(Silver Bowl Winner 1994)
- 2 boneless chicken breast halves, skinned
- 1 c. plain yogurt
- 1 1/2 Tbsp. oil
- 1 - 2 garlic cloves, minced
- 1/2 - 1 Tbsp. cumin
- 1/4 tsp. cardamon
- 1/8 - 1/4 tsp. ground cloves (optional)
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 - 1/2 tsp. crushed red pepper flakes
- juice of one lemon
- 2 c. prepared wild rice
- Rinse and dry chicken breasts.
- Score each breast two or three times on each side.
- Combine other ingredients (except rice) in a bowl.
- Note:
- Chicken may be allowed to marinate in mixture overnight.
- Brush chicken with sauce.
- Place on grill or in broiler.
- Cook, covered; turning and basting every 5 to 10 minutes until juices run clear.
- Serve chicken on rice.
