Charlotte De Pommes(A.K.A.: Errol'S Apple Charlotte, An Unusual And Delicious
- 8 lb. Granny Smith or Golden Delicious apples (do not substitute)
- zest and juice of 2 lemons
- 1 c. sugar
- 1/2 c. apricot jam
- 1 Tbsp. pure vanilla extract
- 1/4 c. Jamaican dark rum
- 3 Tbsp. butter (do not substitute)
- 16 to 18 slices firm white sandwich type bread
- 2 sticks melted butter
- 1/2 tsp. cinnamon
- Wash and quarter apples.
- Remove cores and seeds and halve the quarters again; do not peel apples.
- Place apples in a saucepan with the zest and juice of the lemons and cinnamon.
- Cover pan; set over low heat until apples become tender, then mash apples and stir in jam.
- Add sugar, vanilla, rum and 3 teaspoons of butter. Heat and stir often until sauce is very thick and stiff and holds its shape solidly on a spoon.
