Charlotte De Pommes(A.K.A.: Errol'S Apple Charlotte, An Unusual And Delicious

  1. Wash and quarter apples.
  2. Remove cores and seeds and halve the quarters again; do not peel apples.
  3. Place apples in a saucepan with the zest and juice of the lemons and cinnamon.
  4. Cover pan; set over low heat until apples become tender, then mash apples and stir in jam.
  5. Add sugar, vanilla, rum and 3 teaspoons of butter. Heat and stir often until sauce is very thick and stiff and holds its shape solidly on a spoon.
