Typically Texas Fried Cactus Pad Tidbits
- 4 to 6 large cactus pads
- 2 c. flour
- 2 tsp. salt
- 1 tsp. pepper
- 1 c. milk
- 6 eggs
- crumbs from 6 stale rolls or 10 slices bread
- 1 packet saltine crackers (1/4 box)
- 3 Tbsp. chili powder
- 1 1/2 Tbsp. cayenne
- 2 Tbsp. salt
- 1/2 c. cilantro
- peanut oil for deep frying
- Using paring knife, remove spiny needles from cactus pads. Slice into 1/2-inch wide strips.
- Wash thoroughly and drain.
- Mix flour, salt and pepper; set aside.
- Blend milk and eggs well.
- In another bowl, mix crumbs, crackers, chili powder, cayenne and salt.
- Dredge cactus in seasoned flour, then place in egg-milk mixture, then in seasoned crumbs.
- Heat oil to 350u0b0.
- Fry pads in batches 1 to 2 minutes until golden brown.
- Makes about 40 strips.
