Typically Texas Fried Cactus Pad Tidbits

  1. Using paring knife, remove spiny needles from cactus pads. Slice into 1/2-inch wide strips.
  2. Wash thoroughly and drain.
  3. Mix flour, salt and pepper; set aside.
  4. Blend milk and eggs well.
  5. In another bowl, mix crumbs, crackers, chili powder, cayenne and salt.
  6. Dredge cactus in seasoned flour, then place in egg-milk mixture, then in seasoned crumbs.
  7. Heat oil to 350u0b0.
  8. Fry pads in batches 1 to 2 minutes until golden brown.
  9. Makes about 40 strips.
