Tomato Cheese Pie
- 8 slices buttered white bread, crusts removed
- 4 Tbsp. dry bread crumbs
- 1 (1 qt.) can tomatoes
- 1 Tbsp. grated onion
- salt and pepper to taste
- 1 tsp. sugar
- 2 eggs
- 4 oz. grated Cheddar cheese or 5 slices American cheese
- 1 c. milk
- 1 extra egg white, slightly beaten
- Butter well a 9-inch pie pan or casserole dish.
- Line pan with bread, butter side down, cutting strips to fit around the sides. Brush bread surface with beaten egg white and sprinkle with dry bread crumbs.
- Drain tomatoes from the juice.
- Lay tomatoes on crumbs.
- Sprinkle with the salt, pepper, sugar and onions. Sprinkle evenly with grated cheese.
- Beat eggs with milk and pour over all.
- Bake at 350u0b0 for 30 minutes.
