Lime Parfait Pie

  1. In a large bowl dissolve gelatin in boiling water.
  2. Stir in lime peel and lime juice.
  3. Add ice cream by spoonfuls, stirring until melted.
  4. Chill till partially set (the consistence of unbeaten egg whites).
  5. Whip the 1 cup whipping cream and fold into lime mixture.
  6. Chill till mixture mounds when spooned.
  7. Turn into baked pastry shell.
  8. Chill several hours or overnight until set. To serve, top with unsweetened whipped cream and maraschino cherries if desired.
  9. Cover and chill to store.
  10. Makes 8 servings.
