Lime Parfait Pie
- 1 3-ounce package of lime flavored Jell-O
- 1/2 cup boiling water
- 3/4 teaspoon finely shredded lime peel
- 1/4 cup lime juice
- 1 pint vanilla ice cream
- 1 9-inch baked pastry shell (I usually use a graham cracker crust instead)
- 1 cup whipping cream (I usually use Cool Whip instead)
- In a large bowl dissolve gelatin in boiling water.
- Stir in lime peel and lime juice.
- Add ice cream by spoonfuls, stirring until melted.
- Chill till partially set (the consistence of unbeaten egg whites).
- Whip the 1 cup whipping cream and fold into lime mixture.
- Chill till mixture mounds when spooned.
- Turn into baked pastry shell.
- Chill several hours or overnight until set. To serve, top with unsweetened whipped cream and maraschino cherries if desired.
- Cover and chill to store.
- Makes 8 servings.
