Raw Chocolate Brownies

  1. Line a 8 x 9 pan with parchment paper.
  2. In a food processor, blend 2 cups walnuts to a fine crumb.
  3. Add dates and process until sticky.
  4. Add the cacao powder, vanilla and salt.
  5. Blend, starting low and turning up to high, scraping down every 10-15 seconds until combined.
  6. Press into lined pan, and freeze for 10 minutes.
  7. While brownie mixture is in the freezer, prepare the topping:
  8. Combine all remaining ingredients in blender and blend until smooth.
  9. Spread on top of frozen brownie mix and freeze for another 20 minutes.
  10. Cut while still firm and frozen. Store in freezer for up to 6 weeks!
