Pumpkin Bread(Spicy Cake Type Bread)
- 3 1/3 c. flour
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 1/2 Tbsp. ground nutmeg
- 2 1/4 c. mashed pumpkin
- 3 c. sugar
- 1 1/2 Tbsp. ground cinnamon
- 1/2 tsp. ground ginger
- 3/4 c. vegetable oil
- 1/3 c. cream sherry
- 1/3 c. water
- 4 eggs, slightly beaten
- 1/2 c. raisins
- 1/2 c. chopped nuts
- Cut
- pie pumpkin in half;
- scoop out seeds.
- Place, cut side down,
- on
- cookie
- sheet
- and
- bake at 375u0b0 for 40 to 50 minutes, until soft.
- Let
- cool; peel off skin, cube, mash and drain (or you can use one 18 ounce can of pumpkin pie mix; use lesser amounts of cinnamon
- and
- nutmeg
- if you use canned pie mix).
