Earl Grey Biscotti

  1. Preheat the oven to 350 F.
  2. In a large mixing bowl, mix together butter, sugar, eggs and vanilla extract with a wooden spoon.
  3. In another bowl, mix together flour, almond meal, baking powder, cocoa powder, salt and the contents of Earl Grey tea bags. Mix well.
  4. Gradually add the flour mixture to the butter mixture, blending it together well.
  5. Put the dough onto a lightly floured surface and divide it into two pieces. Form two logs, approximately 10 inches by 3 inches.
  6. Grease a baking sheet with a little bit of butter or line it with parchment paper. Place both logs on it and bake for 30 minutes on the middle rack.
  7. Remove from the oven and let cool for 10-15 minutes. Once cool, cut the logs into 1 inch slices with a serrated knife.
  8. Place the biscotti back on the baking sheet, cut side down, and bake for 7-8 minutes. Remove from the oven, turn them on the other cut side and bake for another 7-8 minutes. Take the biscotti out of the oven and let them cool completely.
