Earl Grey Biscotti
- 1 cup brown sugar, packed tightly
- 1/2 cup butter (1 stick)
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 cup almond meal (ground almonds) - if you don't have this, you can just use another 1/2 cup of AP flour instead
- 1/2 cup unsweetened cocoa powder
- 4 packets Earl Grey tea
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- Preheat the oven to 350 F.
- In a large mixing bowl, mix together butter, sugar, eggs and vanilla extract with a wooden spoon.
- In another bowl, mix together flour, almond meal, baking powder, cocoa powder, salt and the contents of Earl Grey tea bags. Mix well.
- Gradually add the flour mixture to the butter mixture, blending it together well.
- Put the dough onto a lightly floured surface and divide it into two pieces. Form two logs, approximately 10 inches by 3 inches.
- Grease a baking sheet with a little bit of butter or line it with parchment paper. Place both logs on it and bake for 30 minutes on the middle rack.
- Remove from the oven and let cool for 10-15 minutes. Once cool, cut the logs into 1 inch slices with a serrated knife.
- Place the biscotti back on the baking sheet, cut side down, and bake for 7-8 minutes. Remove from the oven, turn them on the other cut side and bake for another 7-8 minutes. Take the biscotti out of the oven and let them cool completely.
