Chicken La Orange
- 1 broiler or fryer chicken, cut into pieces
- salt, pepper and paprika
- 1/4 c. melted butter or oleo
- 2 onions, sliced
- 1/2 c. chopped green pepper
- 1 c. chopped mushrooms
- 2 c. orange juice
- 1/4 c. sherry
- 2 Tbsp. brown sugar
- 1 tsp. salt
- 2 Tbsp. grated orange rind
- 3 Tbsp. water
- 2 Tbsp. cornstarch
- Wash and dry chicken.
- Sprinkle with salt, pepper and paprika. Roll pieces in flour.
- Place chicken in casserole.
- Sprinkle over with onion, green pepper and mushrooms.
- In saucepan, mix orange juice, sherry, brown sugar, salt and orange rind.
- Mix water and cornstarch.
- Stir into orange juice mixture.
- Cook over low heat, stirring until mixture thickens.
- Pour over chicken.
- Bake at 375u0b0 for 1 hour, uncovered.
