Donnybrook Oatmeal Cookies(Diabetic)
- 1/2 c. softened butter or margarine
- 4 tsp. Sweet*10
- 1 tsp. vanilla extract
- 1 egg
- 3/4 c. cold water
- 1 c. flour
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 c. quick cooking oatmeal
- 1/2 c. raisins (optional)
- Combine butter, Sweet*10, vanilla and egg in large mixer bowl; beat for 2 minutes, or until well blended at high speed of electric mixer, scraping bowl occasionally.
- Add water, flour, soda, salt and cinnamon.
- Beat at low speed for about 2 minutes, or until well combined.
- Stir in oatmeal and raisins.
- Dough will be soft.
- Drop from teaspoon, 2 inches apart, onto ungreased cookie sheet.
- Bake at 375u0b0 for 12 to 15 minutes.
- Store in refrigerator.
- Yields 36 cookies.
