Perfect Vegan And Gluten Free Berry Cobbler
- Ingredients for Biscuit
- 2/3 cup almond meal
- 1/2 cup millet flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1 tablespoon pure maple syrup
- 1/2 cup almond milk
- 1/4 cup softened coconut oil
- Ingredients for Fruit Base
- 1/2 cup frozen strawberries
- 1/2 cup frozen blueberries
- 1 tablespoon pure maple syrup
- 1/2 teaspoon ground cinnamon
- Preheat the oven to 375 F degrees. Fill a round baking pan (a pie dish is best) with the fruit base ingredients and toss them together.
- In a medium to large bowl whisk together the almond meal, millet flour, baking powder, and salt. Then add the wet ingredients and mix them with a wooden spoon. The batter should be both somewhat chunky and runny at the same time. Place the batter on top of the berry mixture so most of it is covered up, and bake for approximately 18-20 minutes, or until golden brown. Serve with vegan ice cream and enjoy! I suggest using So Delicious vanilla bean ice cream.
