Golden Coconut Peach Pie

  1. In a medium bowl, combine peaches, sugar, flour, nutmeg, salt and juice.
  2. Pour into pie shell; dot with butter. Bake at 450u0b0 for 15 minutes.
  3. Meanwhile, combine remaining ingredients.
  4. Pour over hot filling.
  5. Reduce heat to 350u0b0 and bake until the coconut is toasted, about 40 minutes.
  6. Serve warm or chilled.
  7. Store in the refrigerator.
  8. Yield: 8 servings.
