Fluffy Fruit Salad
- 2 (20 oz. each) cans crushed pineapple, drained (reserve 1 1/2 c. juice)
- 1 c. sugar
- 3 Tbsp. flour
- 3 eggs, lightly beaten
- 3/8 c. orange juice
- 4 1/2 Tbsp. lemon juice
- 1 1/2 Tbsp. vegetable oil
- 2 cans fruit cocktail, drained
- 2 cans mandarin oranges, drained
- 2 bananas, sliced
- 1 1/2 c. heavy cream, whipped or 12 oz. Cool Whip
- Put reserved pineapple juice in small saucepan.
- To this, add the next 6 ingredients.
- Bring to a boil and cook 1 minute. Remove from heat and cool.
- Combine in a salad bowl the pineapple, fruit cocktail, oranges and bananas.
- Mix the whipped cream with cooled sauce.
- Fold into fruit.
- Chill for several hours.
- Serves 12 to 16 people.
