Chicken-Broccoli Casserole
- 2 (10 oz.) pkg. frozen broccoli spears
- diced, cooked meat (from a 3 1/2 to 4 lb. chicken)
- 2 cans cream of chicken soup
- 1 c. mayonnaise (not salad dressing)
- 1/2 c. bread crumbs
- 1 tsp. lemon juice
- 1/2 tsp. curry powder
- 1/2 c. grated sharp Cheddar cheese
- 1 Tbsp. melted butter or oleo
- Cook broccoli until just tender; drain well and pat dry with paper towels.
- Arrange on bottom of a 2-quart (7 x 11-inch) buttered rectangular casserole.
- Place chicken on top of broccoli. Combine soup, mayonnaise, lemon juice and curry powder and pour over chicken.
- Sprinkle with cheese.
- Combine melted butter and bread crumbs and put on top of casserole.
- Bake 30 minutes at 350u0b0.
