Cranberry-Nut Coffee Cake
- 1/2 c. margarine
- 1 c. sugar
- 2 eggs
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 pt. sour cream
- 1 tsp. almond extract
- 1 (18 oz.) can whole cranberry sauce
- 1/2 c. chopped walnuts
- Cream together the margarine and sugar.
- Add eggs, one at a time; beat well.
- In a separate bowl, mix together the flour, baking soda, baking powder and salt.
- Add dry ingredients to egg mixture, alternating with sour cream.
- Add almond extract; mix well.
- Pour 1/2 batter in a greased and floured tube pan.
- Spread evenly to cover bottom of pan.
- Pour 1/2 cranberry sauce over batter.
- Add remaining batter, then top with cranberry sauce. Sprinkle walnuts on top.
- Bake at 350u0b0 for 55 minutes.
- Leave in pan for 5 minutes.
