Gumbo

  1. Make roux in microwave:
  2. Mix oil and flour and cook 2 minutes. Stir.
  3. Continue cooking 2 minutes and stir until it is the color of a copper penny.
  4. Do not burn.
  5. In large aluminum Dutch oven or pot (not iron), saute onion, celery, peppers, garlic and okra in margarine.
  6. Add roux, water, Ro-Tel and Worcestershire and season with salt and pepper.
  7. Add sausage cut in 1-inch pieces.
  8. Cook 1 hour.
  9. Add shrimp, fish, oysters and chicken.
  10. Cook about 30 minutes.
  11. Serve over cooked rice.
