Gumbo
- 1 c. oil
- 1 c. flour
- 1 stick margarine
- 1 c. chopped onions
- 1/2 c. chopped bell pepper
- 1/2 c. chopped celery
- 4 cloves garlic, minced
- 2 c. chopped okra, cooked
- 3 qt. water
- 1 can Ro-Tel tomatoes with chilies
- 1 Tbsp. Worcestershire
- salt and pepper to taste
- 1 lb. Italian sausage
- 2 lb. shrimp
- 1/2 lb. fish fillets
- 1 pt. oysters
- cut up cooked chicken
- cooked rice
- Make roux in microwave:
- Mix oil and flour and cook 2 minutes. Stir.
- Continue cooking 2 minutes and stir until it is the color of a copper penny.
- Do not burn.
- In large aluminum Dutch oven or pot (not iron), saute onion, celery, peppers, garlic and okra in margarine.
- Add roux, water, Ro-Tel and Worcestershire and season with salt and pepper.
- Add sausage cut in 1-inch pieces.
- Cook 1 hour.
- Add shrimp, fish, oysters and chicken.
- Cook about 30 minutes.
- Serve over cooked rice.
