Black Bean Dip
- 2 Cans Black Beans (Rinsed and Drained)
- 1/2 Red Onion (Chopped)
- 3 Garlic Cloves (Chopped)
- 1/2 Jalapeno (Chopped)
- 1/2 tablespoon Olive Oil
- 1/4 cup Cilantro (Chopped)
- 1 Plum Tomato (Chopped)
- 3/4 teaspoon Ground Cumin
- 1/4 teaspoon Chipotle Powder
- 1/2 Lime (Juiced)
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground Black Pepper
- In a medium size pan on medium high heat, drizzle 1/2 Tablespoon of Olive Oil until heated. Add the red onion, jalapeno, and garlic cloves, saute until fragrant and browned (5 minutes). Then, pour in 1 can of black beans and continue to cook for another 5-7 minutes. Take off heat and allow to cool for a few minutes.
- Place the cooked bean onion mixture into a food processor and pulse four to five times. Add in seasonings (cilantro, chipotle powder, cumin, lime, salt, and pepper). Continue to pulse a few more times till mixture is mostly chopped and well incorporated. Taste for additional seasoning if needed.
- Pour in the second can of black beans and chopped plum tomato and pulse three to four times until chunky. Pour the black bean dip into a bowl and serve with baked chips or fresh cut veggies!
