Creamy Fettuccine Primavera
- 8 oz. fettuccine
- 1 c. broccoli flowerets
- 1 c. julienne cut carrots
- 1/2 c. chopped red pepper
- 1 3/4 c. skim milk
- 1 (8 oz.) pkg. Neufchatel cheese, cubed
- 1/2 c. chopped green onions
- 1/2 tsp. Italian seasoning
- 1/4 tsp. garlic powder
- 1 c. julienne cut, cooked chicken or turkey
- 1/2 c. grated Parmesan cheese
- Prepare fettuccine as directed on package, adding broccoli, carrots and red pepper during the last 5 minutes of cooking time; drain.
- Stir milk, Neufchatel cheese, onions and seasonings in medium saucepan on low heat until smooth.
- Stir in turkey and Parmesan cheese.
- Toss pasta and vegetables with sauce.
- Serve immediately.
