One Pot Meal
- 2 1/2 lb. meaty country-style pork ribs
- 3 Tbsp. all-purpose flour
- 1/2 tsp. garlic salt
- 2 Tbsp. butter, margarine or oil
- 4 medium potatoes, diced
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 c. each: chopped onion and green pepper
- 1 can cream-style corn
- 1 fresh tomato, diced
- 3/4 c. milk
- 2 green onions, thinly sliced
- Dust ribs with flour; sprinkle with garlic salt.
- Brown in heated butter in heavy skillet.
- Layer potatoes in a lightly oiled 13 x 9-inch baking dish.
- Sprinkle with salt, black pepper, onion and green pepper.
- Pour milk over vegetables; cover with corn.
- Top with browned ribs, covering vegetables in single layer.
- Cover and bake at 350u0b0 for 30 minutes.
- Remove cover; bake 30 minutes or until ribs and potatoes are done.
- Before serving, sprinkle with tomatoes and green onions.
