Panettone(Easter Or Christmas Fruit Bread)
- 3 envelopes dry yeast
- 1/4 c. warm water
- 4 1/4 c. warm milk
- 1 Tbsp. sugar
- 1/2 c. butter
- 1/2 c. and 2 Tbsp. sugar
- 2 whole eggs (room temperature)
- 3 egg yolks
- 4 c. sifted flour
- 1/2 c. white raisins
- 1/2 c. dark raisins, soaked in water
- 1/4 c. candied orange peel
- 1/2 c. diced citron
- 1/4 c. coarsely chopped nuts
- Dissolve yeast in 1/4 cup warm water.
- Add warm milk, sugar and sifted flour.
- Cover and let rise for 1 hour.
- Cream butter with sugar; break in whole eggs and beat well.
- Add egg yolks and mix well.
- Add egg mixture to yeast sponge and rest of flour until dough is not sticky (loose from bowl).
- Knead good.
