Sweet Potato Casserole

  1. Combine sweet potatoes, 3/4 cup brown sugar substitute, milk, egg, melted margarine and vanilla, stirring until well blended. Spoon into a shallow baking dish coated with vegetable cooking spray (Pam).
  2. Combine flour and remaining 1/4 cup brown sugar substitute; cut in 1 tablespoon margarine until mixture is crumbly.
  3. Sprinkle over potatoes and bake at 350u0b0 for 35 minutes or until thoroughly heated.
  4. Serving amount is 1/3 cup at 85 calories.
  5. Diabetic Exchange:
  6. 1 starch.
