Sweet Potato Casserole
- 1 (18 oz.) can sweet potatoes, drained
- 1 c. granulated brown sugar substitute, divided
- 1/4 c. skim milk
- 1 egg
- 1 Tbsp. reduced calorie margarine, melted
- 1 tsp. vanilla extract
- 1 Tbsp. all-purpose flour
- 1 Tbsp. reduced calorie margarine
- Combine sweet potatoes, 3/4 cup brown sugar substitute, milk, egg, melted margarine and vanilla, stirring until well blended. Spoon into a shallow baking dish coated with vegetable cooking spray (Pam).
- Combine flour and remaining 1/4 cup brown sugar substitute; cut in 1 tablespoon margarine until mixture is crumbly.
- Sprinkle over potatoes and bake at 350u0b0 for 35 minutes or until thoroughly heated.
- Serving amount is 1/3 cup at 85 calories.
