Creamy Seafood Casserole
- 2 c. cooked shell macaroni
- 3 oz. Neufchatel cheese
- 1 c. plain low-fat yogurt
- 1 c. Ricotta cheese
- 1/3 c. chopped green onion
- 1 tsp. dried whole basil
- 1/4 tsp. garlic powder
- 1 (2 oz.) jar diced pimiento (undrained)
- vegetable cooking spray
- 1 lb. crabmeat, flaked
- 1/2 c. shredded Monterey Jack cheese
- Combine Neufchatel cheese and the next 6 ingredients.
- Coat a 2-quart baking dish with cooking spray.
- Place 1/2 of macaroni in baking dish.
- Sprinkle 1/2 crabmeat over macaroni.
- Spoon 1/2 of cheese mixture over crabmeat.
- Repeat layers with remaining ingredients.
- Bake at 350u0b0 for 30 minutes.
- Sprinkle with shredded Monterey Jack cheese and bake an additional 5 minutes, or until cheese melts.
- Let stand 10 minutes before serving.
