Honey-Orange Chicken
- 2 eggs
- 2 tsp. water
- 1 c. breadcrumbs
- 1 tsp. salt
- 1/8 tsp. pepper
- garlic and onion powder to taste
- 2 to 3 lb. fryer, cut up
- 1/2 c. vegetable oil
- 1 c. hot water
- 1/4 c. honey
- 1 c. orange juice
- 2 Tbsp. grated fresh ginger or 1 tsp. ground ginger
- Preheat oven to 350u0b0.
- Beat the eggs with 2 teaspoons water. In another bowl, mix the breadcrumbs with spices.
- Dip chicken in egg mixture and then in breadcrumbs.
- Heat oil in skillet and brown chicken on all sides.
- Combine 1/4 cup honey, hot water and orange juice.
- Place chicken in casserole; pour in water, honey/orange juice mixture.
- Add ginger.
- Cover and simmer in oven for 45 minutes, basting occasionally.
