Partin Valley Fried Catfish

  1. Starting at rib cage
  2. of
  3. catfish,
  4. cut
  5. 3 large X's on each side of fish.
  6. Sprinkle
  7. with
  8. salt;
  9. place
  10. in a shallow dish and add
  11. Tabasco sauce.
  12. Marinate in the refrigerator for at least 2 hours.
  13. Place
  14. cornmeal,
  15. flour, baking powder and 1/2 teaspoon salt in a plastic bag;
  16. drop catfish in, one at a time, and shake until
  17. completely coated.
  18. Fry in deep hot oil (375u0b0) until fish float
  19. to
  20. the
  21. top
  22. and are a golden brown. Drain on paper towels.
  23. Serve with lemon wedges.
