Melon, Cucumber & Corn Salad
- Honey Vinaigrette by Southern Living
- 1/2 cup Canola Oil
- 1/3 cup White balsamic vinegar
- 2 tablespoons Honey
- 2 teaspoons Minced shallot
- 1/4 teaspoon each salt and fresh ground pepper
- Salad
- 1 medium sized cucumber, peeled, seeded and cut into half circles (about 3/4c)
- 2 cups Cantaloupe seeded and cut into bite sized pieces or use a melon baller for that fancy finish
- 1 cup Cooked corn (about 1 ear)
- 1/3 cup Feta Cheese, crumbled
- 1 teaspoon fresh thyme leaves, chopped
- Combine dressing ingredients in a lidded jar and shake until fully incorporated.
- Add salad ingredients to a medium sized bowl and add dressing, start with 2 T and add more to taste.
- Place in refrigerator one hour before serving or chill salad ingredients before prepping to serve immediately.
