Banh Mi With Turkey Shrimp Meatballs
- Meatballs
- 12 ounces ground turkey
- 6 ounces shrimp
- 2 pieces green onions, thinly sliced using the whole piece
- 2 pieces garlic chopped
- 1 egg
- 1/3 cup panko bread crumbs
- 2 tablespoons chopped fresh basil
- 2 teaspoons chopped pickled ginger
- 1 teaspoon asian chili sauce
- 2 teaspoons fish sauce
- 1/2 teaspoon salt
- 1 french baguette
- Slaw
- 1 tablespoon fish sauce
- 1 teaspoon chili sauce
- 1 lime juiced
- 1 teaspoon sugar
- 1 pinch salt
- 1 tablespoon rice wine vinegar
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/2 jalapeno thinly sliced
- 2 tablespoons chopped cilantro
- 2 pieces green onions, thinly sliced using the whole piece
- For meatballs:
- Mix together well all ingredients except the baguette and form golf ball sized balls. I use an ice cream scooper so they are all the same size. Heat pan with a tablespoon of vegetable oil over medium heat. Cook meatballs until brown on all sides about 8 - 10 minutes.
- Mix together first 6 ingredients and set aside. In bowl, add in all the rest of the ingredients and pour sauce over slaw. Mix well and set aside.
- To assemble the sandwiches, butterfly the baguette and add in 3 meatballs, drizzle in sauce and top with slaw.
- For sauce, mix together 1/4 cup of plain greek yogurt and add 1/2 lime juice, a pinch of salt, a pinch of sugar, and 1- 2 teaspoon of chili sauce.
- The slaw already has a lot of sauce but it just adds that extra flavor.
