Dr. Malley'S Orange Cake
- 1 c. butter, room temperature
- 1 1/2 c. sugar
- 3 eggs, separated
- 2 c. flour
- 1 tsp. baking powder
- 1 tsp. soda
- 1 c. sour cream
- 1 orange rind, grated
- 1/2 c. chopped walnuts or pecans
- 1/4 c. orange juice
- 1/3 c. Grand Marnier or other orange flavored liqueur (Cointreau)
- 2 Tbsp. blanched almonds
- Heat oven to 350u0b0.
- Cream together the butter and one cup of sugar until light and fluffy.
- Beat in the egg yolks.
- Sift together the dry ingredients and add them alternately with the sour cream, stirring until smooth.
- Stir in the orange rind and the chopped nuts.
- Beat the egg whites until stiff (but not dry) and fold into batter.
- Grease a 9-inch tube cake pan and pour in the batter.
- Bake 50 minutes or until cake tests done.
