Low Cholesterol Dinner Rolls
- 3/4 c. corn oil
- 1 c. hot water
- 4 oz. egg whites or substitutes
- 3/4 c. honey
- 1 1/2 tsp. salt
- 1 c. cold skim milk
- 2 pkg. dry yeast
- 1/2 c. warm water
- 7 1/2 c. flour (may vary)
- In large bowl, combine oil, hot water and honey.
- In small bowl, combine beaten whites, salt and skim milk.
- Soften yeast in warm water.
- Add contents of small bowl to large bowl mixture, then add yeast.
- Stir in 6 cups of flour; knead until smooth and elastic, adding flour as needed to make dough smooth.
- Lightly smooth top of dough with oil.
- Cover with cloth; let rise until double in size.
- Punch down and shape rolls as desired.
- Place on greased cookie sheet.
- Let rise until double again.
- Bake for 10 to 12 minutes in a 400u0b0 oven.
- Makes 4 dozen.
