Italian Style Pasta Salad
- 4 oz. spaghetti or vermicelli
- 1 (6 oz.) jar marinated artichoke hearts, drained
- 1/2 c. sliced zucchini
- 1/2 c. shredded carrot
- 2 oz. sliced salami, cut into strips
- 1 c. (1/4 lb.) shredded Mozzarella cheese
- 2 Tbsp. grated Parmesan cheese
- 1/2 c. Italian salad dressing
- 1/4 tsp. dried oregano, crushed
- 1/4 tsp. dried basil, crushed
- 1/4 tsp. dry mustard
- 1 clove garlic, minced
- Break spaghetti in half.
- Cook spaghetti according to package directions; drain.
- Set aside.
- Coarsely chop artichoke hearts. Halve zucchini slices.
- In large bowl, combine spaghetti, artichokes, zucchini, carrot, salami and cheeses.
- In jar with tight fitting lid, combine dressing, oregano, basil, mustard and garlic; shake well.
- Pour dressing over spaghetti mixture.
- Toss to coat evenly.
- Cover and chill several hours before serving. Makes 8 to 10 side dish servings or 4 to 5 main dish servings.
