Cheesy Taco Casserole
- broken taco chips (plain)
- 1 1/2 lb. ground beef
- 1 small onion
- 1 can mushrooms
- 1/2 can ripe olives
- lettuce, tomatoes, sour cream and taco sauce
- 1 pkg. taco seasoning
- 1 can refried beans
- 4 oz. Cheddar cheese
- 4 to 8 oz. Mozzarella
- 1/2 jar green olives
- Brown ground beef and onion.
- Place broken chips into a 9 x 13-inch greased pan.
- Add taco seasoning to drained beef and cook as package says.
- Add water and simmer 15 minutes, covered.
- Add refried beans, mushrooms and olives and simmer 5 more minutes. Put meat mixture over chips.
- Sprinkle with cheese. Bake at 325u0b0 until cheese is melted, 10 to 15 minutes.
- Serve with chopped lettuce, tomatoes, sour cream and taco sauce.
- If you are not going to bake right away, keep mixture hot in the crock-pot so it doesn't dry out.
