Chunky Peanut Butter And Banana Cookies
- 1/2 cup butter, room temperature
- 1 cup brown sugar
- 1/2 cup sugar
- 6 tablespoons chunky peanut butter
- 1 egg yolk
- 2 teaspoons vanilla extract
- 1 medium, ripe banana, about 1/3 cup mashed
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1 1/2 cups semi sweet chocolate chips
- 1/2 cup chopped peanuts, unsalted
- Preheat oven to 350u0b0F. Line 2 baking sheets with parchment paper.
- Using an electric mixer, cream butter, brown sugar and sugar together on medium speed until light and fluffy. Add peanut butter, egg yolk, vanilla and mashed banana until well combined. On low speed add flour, baking soda, salt, chocolate chips and chopped peanuts, mixing just until flour disappears.
- Drop dough by 1/4 cup at a time, 2 inches apart on to the prepared baking sheets. Bake for 14-15 minutes, or until the edges are golden brown. Remove from oven and allow to cool a few minutes before transferring cookies to a wire rack.
- Yield: 12-14 cookies
