Apple Pie Cake

  1. Heat oven to 325u0b0 F. rnGrease two 8" round cake pans and line with parchment. Or one 9" round cake pan.
  2. In a large bowl, using an electric mixer on medium-high, beat the butter and cream cheese till combined. Add the granulated and brown sugars until light and fluffy, 3 minutes. Add the eggs, one at a time, beating after each addition. Add vanilla.
  3. In another bowl, combine the flour, baking soda, cinnamon, allspice, nutmeg, and salt. Gradually add the flour mixture to rnthe egg mixture. The batter should be thick. Scrape the batter into prepared baking pan(s).
  4. Sprinkle chopped apples on top and then top with caramel sauce. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes for 2 round pans 50-55 for 9" pan. Transfer to a wire rack. Let cool for at least 20 minutes before cutting.
  5. Caramel Sauce:rnMelt the butter in a saucepan. Stir in flour and corn starch to form a paste. Add water, sugars, vanilla and spices; bring rnto a boil. Reduce temperature and let simmer for a few minutes. Gently pour the sugar and butter liquid over the apples. Bake as directed.
