Organic Carrot Muffins & Cream Cheese Frosting
- Carrot Muffins
- 1 stick organic butter
- 1/2 cup organic cane sugar
- 1/2 cup organic brown sugar
- 1 organic egg
- 1 teaspoon vanilla extract
- 3 organic finely shredded carrots
- 1 1/2 cups organic flour
- 1/2 cup chopped walnuts
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- Cream Cheese Frosting
- 8 ounces cream cheese
- 2 tablespoons soft organic butter
- 2 cups organic powdered sugar
- 1 teaspoon vanilla extract
- Place butter, sugars, egg and vanilla in stand mixer and mix until creamy.
- Add remaining muffin ingredients and mix until ingredients are well blended.
- Line muffin tin with papers.rnPlace a heaping spoonful of batter into each muffin tin.
- Bake at 350* for 30 minutes.
- Place all frosting ingredients in a stand mixer and blend until creamy.
- Frost each muffin generously.
