Fish Italiano
- 4 codfish fillets (6 oz. each)
- 1/2 c. Nutri-Grain wheat cereal, crushed
- 1/2 c. Parmesan cheese, grated
- 1/3 c. fresh parsley or 2 Tbsp. dried
- 1/2 tsp. garlic powder
- 1/2 tsp. paprika
- 1/4 tsp. salt (optional)
- 1/4 tsp. black pepper
- 2 egg whites, slightly beaten
- 4 lemon slices
- Pat fish dry.
- Combine cereal, Parmesan cheese, parsley, garlic powder, paprika, salt and pepper in a shallow dish, mixing well.
- Dip fish in egg whites and then in crumb mixture, coating well.
- Arrange in a shallow 2-quart baking dish, with thickest portions to the outside of the dish.
- Cover with plastic wrap, venting to allow steam to escape and microwave on High for 8 to 10 minutes or until fish flakes easily with a fork, turning the dish every 2 minutes.
- Garnish with lemon slices.
- Serves 4.
- (Other fish could be used.)
