Fish Italiano

  1. Pat fish dry.
  2. Combine cereal, Parmesan cheese, parsley, garlic powder, paprika, salt and pepper in a shallow dish, mixing well.
  3. Dip fish in egg whites and then in crumb mixture, coating well.
  4. Arrange in a shallow 2-quart baking dish, with thickest portions to the outside of the dish.
  5. Cover with plastic wrap, venting to allow steam to escape and microwave on High for 8 to 10 minutes or until fish flakes easily with a fork, turning the dish every 2 minutes.
  6. Garnish with lemon slices.
  7. Serves 4.
  8. (Other fish could be used.)
