Banana-Carrot Muffins

  1. Preheat oven to 350u0b0.
  2. Grease a 12 cup muffin tin.
  3. Grate carrots.
  4. Mash bananas.
  5. Cream margarine and sugar until fluffy. Add egg and beat well.
  6. Stir in bananas.
  7. In a small bowl, mix together oat bran, wheat germ, flour, baking powder, salt and baking soda.
  8. Add to banana mixture.
  9. Add carrots, vanilla and nuts carefully.
  10. Fill muffin tin and bake 20 to 25 minutes or until a cake tester comes out clean.
