Banana-Carrot Muffins
- 3 medium carrots
- 2 medium bananas
- 2 Tbsp. margarine
- 1/4 c. brown sugar
- 1 c. oat bran
- 1/2 c. wheat germ
- 1/2 c. wheat flour
- 1 large egg
- 2 tsp. double-acting baking powder
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1 tsp. vanilla
- 1/2 c. chopped walnuts
- Preheat oven to 350u0b0.
- Grease a 12 cup muffin tin.
- Grate carrots.
- Mash bananas.
- Cream margarine and sugar until fluffy. Add egg and beat well.
- Stir in bananas.
- In a small bowl, mix together oat bran, wheat germ, flour, baking powder, salt and baking soda.
- Add to banana mixture.
- Add carrots, vanilla and nuts carefully.
- Fill muffin tin and bake 20 to 25 minutes or until a cake tester comes out clean.
