Chili Rellenos Bake
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 (4 oz.) can green chilies
- 1 1/2 c. shredded sharp Cheddar cheese
- 4 eggs
- 1 1/2 c. milk
- 1/4 c. all-purpose flour
- hot pepper sauce
- In skillet brown ground beef and chopped onion.
- Drain off fat. Sprinkle meat with 1/2 teaspoon of salt and pepper.
- Place 1 can of green chilies, cut in half crosswise and seeded, over meat. Combine beaten eggs, milk, flour, salt, several dashes of bottled hot pepper sauce and dash of pepper.
- Beat until smooth.
- Pour over chili mixture.
- Bake in moderate 350u0b0 oven for 45 to 50 minutes or until knife inserted just off center comes out clean.
- Let cool 5 minutes.
- Cut in squares to serve.
- Serves 6.
