Crispy Oven-Fried Chicken

  1. Combine egg substitute and water in shallow dish, stir well. Combine cereal and next 6 ingredients in shallow dish; stir well. Place chicken pieces and flour in a large zip-top plastic bag, seal bag and shake until chicken is well coated.
  2. Dip chicken in egg substitute mixture, dredge in cereal mixture.
  3. Place chicken on rack of a broiler pan coated with vegetable cooking spray. Bake, uncovered, at 350u0b0 for 1 hour or until chicken is tender and golden.
  4. Yields 6 servings (248 calories).
