Crispy Oven-Fried Chicken
- 1/4 c. plus 2 Tbsp. frozen egg substitute, thawed
- 1 Tbsp. water
- 1 c. crispy rice cereal, crushed
- 1/3 c. toasted wheat germ
- 1 Tbsp. instant minced onion
- 1/2 tsp. salt-free herb seasoning
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 (3 lb.) broiler-fryer chicken, cut up and skinned
- 1/4 c. all-purpose flour
- Combine egg substitute and water in shallow dish, stir well. Combine cereal and next 6 ingredients in shallow dish; stir well. Place chicken pieces and flour in a large zip-top plastic bag, seal bag and shake until chicken is well coated.
- Dip chicken in egg substitute mixture, dredge in cereal mixture.
- Place chicken on rack of a broiler pan coated with vegetable cooking spray. Bake, uncovered, at 350u0b0 for 1 hour or until chicken is tender and golden.
