Chicken Bake
- 4 tsp. butter
- 1/4 c. chopped onion
- 1/2 tsp. celery salt
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 1 (4 oz.) can mushrooms, sliced
- 2 c. cooked rice
- 1 can cream of chicken soup
- 1 large can evaporated milk
- 3 tsp. chopped pimento
- 2 c. cooked chicken, chopped
- 1/4 c. Parmesan cheese
- 1 c. grated cheese
- Drain mushrooms; save liquid.
- Melt butter in saucepan.
- Saute onion.
- Add seasonings and mushroom liquid.
- Blend in chicken soup and stir until smooth.
- Gradually add milk, stirring, until smooth and thick.
- Mix rice, mushrooms, pimento and chopped chicken.
- Pour into a buttered pan.
- Top with grated cheese.
- Bake in a 350u0b0 oven for 30 minutes.
