Slow Cooker Minestrone
- 1 lb. ground beef
- 1 c. red beans
- 1 c. chopped onions
- 1 c. chopped celery
- 1/2 c. chopped parsley
- 1 (16 oz.) pkg. frozen mixed vegetables
- 1/4 head shredded cabbage
- 1 (14 oz.) can diced tomatoes
- 2 (8 oz.) cans tomato sauce
- 1 Tbsp. dried basil
- 1 Tbsp. dried Italian seasoning
- 1 tsp. salt
- 1 tsp. pepper
- 1 c. macaroni
- 1 can beef broth
- Combine ground beef and beans in a slow cooker.
- Cover and cook on high for 2 hours.
- Add all remaining ingredients except macaroni and stir to combine.
- Cover and cook on low for 6 to 8 hours.
- One hour before cooking is done, stir macaroni into contents of slow cooker.
- Cover and cook on high for 1 hour.
