Calico Meatball Stew
- 1 lb. ground beef
- 1/2 lb. sausage
- 1 c. bread crumbs
- 1/2 tsp. oregano
- 1 egg
- 4 Tbsp. oil
- 2 cans (10 1/4 oz.) beef gravy
- 1 (14 1/2 oz.) can stewed tomatoes
- 3 1/2 c. potatoes, cubed
- 1 1/2 c. sliced carrots
- 1/2 c. chopped onion
- 1 bay leaf
- 1/4 tsp. pepper
- 1 c. frozen peas, thawed
- Mix beef, sausage, bread crumbs, oregano and egg.
- Shape into 24 meatballs.
- In 6-quart Dutch oven over medium heat, brown meatballs.
- Spoon off fat.
- Add gravy, tomatoes, potatoes, carrots, onion, bay leaf and pepper.
- Heat to boiling, stirring occasionally.
- Reduce heat to low.
- Cover and simmer 25 minutes. Stir in peas.
- Cook, uncovered, 5 minutes more.
- Remove bay leaf.
