Best Of Bran Muffins
- 3 c. shredded All-Bran cereal
- 1/2 c. vegetable oil
- 1 c. raisins
- 1 c. boiling water
- 2 eggs, slightly beaten
- 2 c. buttermilk
- 1/4 c. molasses
- 2 1/2 c. whole wheat flour
- 4 tsp. sugar
- 2 1/2 tsp. baking soda
- 1/2 tsp. salt
- Combine cereal, oil and raisins in a large bowl.
- Add boiling water.
- Set aside to cool.
- Slightly combine eggs, buttermilk and molasses in a small bowl.
- Add to cooled mixture.
- Combine flour, sugar, baking soda and salt; add to cereal mixture.
- Stir just to moisten.
- Cover batter with plastic wrap, wax paper or damp towel and let stand up to 1 hour.
- Bake 20 to 25 minutes at 400u0b0 in baking tins 3/4 full.
- Makes 2 dozen.
