Paul'S Chili
- 1 lb. lean ground beef
- 2 large onions, chopped
- 2 (15 1/2 oz.) cans red kidney beans, undrained
- 2 (15 1/2 oz.) cans dark red kidney beans, undrained
- 1 (28 oz.) can peeled Italian style tomatoes, cut up
- 1 (14 1/2 oz.) can stewed tomatoes
- 2 (4 oz.) cans diced green chili peppers
- 1/4 c. chili powder
- 1 tsp. garlic powder
- 1 tsp. dried oregano, crushed
- 1/4 tsp. ground red pepper (optional)
- 1/8 tsp. pepper
- In large Dutch oven, cook the ground beef and chopped onion until meat is brown and onion is tender.
- Drain off fat.
- Stir in the undrained beans, tomatoes and green chili peppers.
- Add the chili powder, garlic powder, oregano, ground red pepper and the pepper.
- Bring to boiling.
- Reduce heat.
- Simmer, uncovered, about 1 1/4 hours, or until desired consistency, stirring occasionally. Makes 12 (1-cup servings) with 226 calories, 17 g fat, 27 mg cholesterol and 10 g fiber.
