Slow Cooked Pepper Steak
- 1 1/2 - 2 lb. beef round steak
- 2 Tbsp. cooking oil
- 1/4 c. soy sauce
- 1 c. chopped onion
- 1 garlic clove, minced
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ground ginger
- 4 tomatoes cut into eights or 1 can tomatoes with liquid
- 2 large green peppers, cut into strips
- 1 large onion cut into 8 pieces
- 1/2 c. water
- 1 Tbsp. cornstarch
- Hot cooked rice or noodles
- Cut beef into 3 inch by 1 inch strips.
- Brown in oil in skillet.
- Transfer to slow cooker.
- Combine the soy sauce, onion, garlic, sugar, salt, pepper, and ginger.
- Pour over beef.
- Cover and cook on low for 5-6 hours or until meat is tender.
- Add tomatoes and green peppers; cook on low for 1 hour longer. Combine the cold water and corn starch to make a paste; stir into slow cooker and cook on high until thickened.
- Serve over rice or noodles.
