Uncle Chip'S World Famous Chili
- 1 lb. bacon (1/2-inch strips)
- 1 lb. polish sausage, sliced
- 2 lb. hamburger
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1/4 c. Worcestershire sauce
- 1 tsp. mustard
- 1 tsp. celery seed
- 1 1/2 tsp. chili powder
- 1 1/2 tsp. black pepper
- 2 cans stewed tomatoes
- 1 can pinto beans
- 1 can kidney beans
- 1 can garbanzo beans
- 1 tsp. garlic salt
- 1 Tbsp. butter
- cajun-creole seasoning
- Brown bacon, sausage and ground beef; drain.
- Cook onion, bell pepper and butter over low heat.
- Stir in Worcestershire sauce. Simmer uncovered 10 minutes.
- Stir in mustard, celery seed, garlic, salt and pepper.
- Simmer 10 minutes.
- Mash tomatoes.
- Mix all remaining ingredients in large pot.
- Bring to boil, then reduce to simmer.
- This is best when simmered for a couple of hours.
- Season with cajun-creole spices to taste (3 to 4 tablespoons for spicy).
