Old Fashioned Cabbage Dinner
- 1 medium head green cabbage (3 or 4 lb.)
- 1 bunch carrots
- 6 or 8 new potatoes
- 2 lb. corned beef or smoked ham hocks
- 1/4 tsp. celery seed
- 1/4 tsp. pepper
- 8 small onions
- 2 green peppers
- 1 tsp. salt
- 1/2 tsp. paprika
- 2 lb. ground beef
- 2 large onions
- 1 small can tomato sauce
- 1 can ripe olives
- 2 c. hot water
- 2 garlic cloves
- 2 Tbsp. bacon fat
- 1 can whole kernel corn
- 1 (No. 2) can tomatoes
- 2 Tbsp. chili powder
- 1 green pepper, chopped
- salt and pepper to taste
- dash of red pepper
- 1 tsp. cumin seed
- 2 c. corn meal
- Saute onions, garlic and pepper in fat for 20 minutes.
- Add seasoning with chopped meat.
- Pour into a large pot.
- Add corn, tomatoes and sauce or puree.
- Pour in bottom of pan (13 x 9-inch) and mix corn meal your usual way and drop by spoon in top of mixture.
- Bake in hot oven for 30 minutes.
- Can sprinkle with 1/2 cup Parmesan cheese.
