Savory Oatmeal With Ham, Poached Eggs, And Hollandaise Sauce
- For the hollandaise sauce:
- 200 grams (about 14 tablespoons) butter
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/2 tablespoon salt
- 1 pinch cayenne pepper
- For the porridge:
- 1 cup oats
- 2 cups water
- 1 pinch salt
- 1 pinch pepper
- 1 tablespoon green pesto
- 1 tablespoon Parmesan or cheddar cheese
- 1/2 avocado
- 4 slices of ham
- 2 eggs
- 1 pinch cayenne pepper
- Start by making the hollandaise sauce. Melt butter (don't heat it too much), and in the meantime, mix all of the other ingredients in a bowl until the mixture becomes lighter in color. Very slowly add the butter to this mixture and blend until everything is well combined.
- In a cooking pot, place oats and water, season with salt and pepper, and cook for about 10 minutes over a medium heat. When the porridge is thick, it's done. Mix in a tablespoon of pesto.
- Make two poached eggs. Making a poached egg is not the simplest thing in the world, but it's not as difficult as most people think. It helps to add 1 tablespoon of vinegar and 1/2 tablespoon of salt to the boiling water and then, just before adding an egg, stir the water to create a whirlpool motion.
- Divide the porridge between two bowls. Sprinkle some grated cheese over top, and place avocado, ham, and a poached egg on each bowl. Finally, pour over the hollandaise sauce and sprinkle each bowl with cayenne pepper.
