Health Nut Bread
- 2 c. flour
- 4 tsp. soda
- 1 tsp. salt
- 2 c. bananas (4 to 6)
- 3/4 c. sunflower oil
- 3 eggs
- 1/4 c. raisins
- 1/4 c. dates, cut up
- 1 1/2 c. whole wheat flour
- 1/4 c. wheat germ
- 2 tsp. cinnamon
- 2 Tbsp. lemon juice
- 1 c. honey
- 1 c. buttermilk
- 1/2 c. chopped nuts
- 1/4 c. dried apples, cut up
- Mix flours, wheat germ, soda, salt and cinnamon.
- In another bowl mash bananas; add lemon juice.
- In another large bowl mix honey and oil; add eggs and mix.
- Add dry ingredients alternately with the buttermilk to honey mixture.
- Fold in bananas and rest of fruit and nuts.
- Pour into greased 9 x 5 x 3-inch loaf pans.
- Bake at 325u0b0 for 1 hour or until toothpick in center comes out clean. Cool in pans for 10 minutes.
- Makes 2 loaves.
