Marinated Vegetables
- 2 carrots, cut into sticks
- 1 c. broccoli flowerets
- 1 c. cauliflowerets
- 1 medium cucumber, sliced
- 1 medium zucchini, sliced
- 1 small onion, sliced and separated into rings
- 1 c. vegetable oil
- 1/2 c. white wine vinegar
- 1 tsp. oregano leaves
- 1 tsp. salt or to taste
- 1/4 tsp. pepper
- 2 tsp. sugar
- 1 tsp. dry mustard
- Cook carrots in small amount of water in covered saucepan over low heat for 2 minutes. Add broccoli and cauliflower.
- Bring to boiling.
- Reduce heat and simmer 3 minutes longer.
- Drain. Combine all vegetables. Combine oil, vinegar and seasonings.
- Pour over vegetables. Cover and chill at least 8 hours, stirring occasionally.
