Sausage Patties(Less Fat, No Chemicals)
- 2/3 c. parsley leaves
- 1 small onion, peeled
- 2 lb. lean pork shoulder, cut into 1-inch squares
- 6 oz. pork fat (optional), cut into 1-inch squares
- 2 tsp. salt
- 1/4 tsp. ground cloves
- 1/4 tsp. freshly ground nutmeg
- 1/4 tsp. cinnamon
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
- 1/2 tsp. freshly ground pepper
- 2 Tbsp. water
- 1/2 tsp. liquid smoke
- 1/4 to 1/2 c. flour
- In food processor, mince the parsley and onion by turning the machine on and off.
- Reserve them.
- Mix the pork and fat in a bowl and divide the mixture into three batches.
- Put 1 batch in the work bowl and chop by turning the machine on and off until it reaches the desired texture.
- Transfer to a large bowl; repeat with remaining two batches.
