Vegan Sugar-Free Apple Strudel
- Ingredients fro the dough
- 200 grams Spelt (or White) flour
- 1 1/2 teaspoons Cream of tartar
- 1/2 teaspoon Powdered Vanilla beans
- 1 pinch salt
- 40 grams Vegetable oil (Sunflower or Corn are the best choices)
- 5 pieces Dates
- 1/2 Lemon zest
- 1/2 cup Water
- Ingredients for the filling
- 2 Medium apples
- 1 cup sultanas
- 12 Plain vegan cookies, crushed
- 1 Lemon zest
- 1/2 teaspoon Powdered Vanilla beans
- 1 pinch salt
- 1/2 teaspoon Cinnamon powder
- Mix the dry ingredients in a bowl, and incorporate the oil. It works very well if you rub the mix between your hands until the oil is evenly distributed.
- Add the dates, chopped and the water and knead gently until you have an evenly coloured and soft dough.
- Wrap it in aluminium foil, and let it rest for 30 minutes in a warm place.
- In the meantime, dice the apples in small pieces
- Mix the apple with all the other filling ingredient and let it marinate while you wait for the the dough to be ready.
- Roll out the dough, and use it to wrap the filling, pressing the edges together with the help of little more water.
- Cook for 30/35 minutes at 180u0b0 until golden brown.
- Serve warm or cold, to taste. Ideal with some nice coconut whipped cream
